3 firm, slightly under-ripe bananas
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
1 tablespoon coconut oil, melted (or neutral oil)
Instructions
Preheat your oven to 300°F (150°C). Line two large baking sheets with parchment paper.
In a small bowl, mix the granulated sugar and ground cinnamon together to create the coating mixture.
Peel the bananas and slice them thinly, about 1/8 inch thick. Use a mandoline if you have one for uniform slices.
In a medium bowl, toss the banana slices with the melted coconut oil until lightly coated.
Spread the oiled banana slices in a single layer on the prepared baking sheets. Do not overlap them.
Bake for 20 minutes. Remove the sheets from the oven and carefully flip each banana chip.
Sprinkle the cinnamon sugar mixture evenly over the chips.
Return the chips to the oven and bake for another 15 to 25 minutes, watching closely. The time varies based on banana thickness and oven. You want them golden brown and crisp.
Remove from the oven and let the chips cool completely on the baking sheets. They will crisp up more as they cool.
Notes
For the crispiest results, ensure your bananas are firm and not overly ripe.
If you prefer an air fryer, cook at 325°F (160°C) for 8-12 minutes, tossing halfway through, then apply the coating and cook for 2-3 more minutes.
Store cooled chips in an airtight container at room temperature for up to one week.
