A simple recipe for a moist loaf cake flavored like a classic cinnamon sugar donut, coated in a sweet, crunchy topping.

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 cup granulated sugar (for topping)
  • 2 tablespoons ground cinnamon (for topping)
  • 1/4 cup unsalted butter, melted (for topping)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour a standard 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and 1/2 teaspoon of cinnamon. Set this aside.
  3. In a large bowl, cream together the softened butter and 3/4 cup of sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry mixture. Mix until just combined; do not overmix.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. While the bread bakes, prepare the topping: In a small bowl, mix the 1/2 cup sugar and 2 tablespoons cinnamon together.
  9. Once the bread is done, let it cool in the pan for 10 minutes.
  10. While the bread is still warm, brush the top surface evenly with the 1/4 cup of melted butter.
  11. Immediately sprinkle the cinnamon-sugar mixture generously over the buttered top.
  12. Let the bread cool completely in the pan on a wire rack before slicing and serving.

Notes

  • For a slightly crispier exterior, you can gently brush the top of the loaf with melted butter a second time after the first sugar coating has set slightly.
  • Use fresh ground cinnamon for the best flavor in the topping.
  • This bread stores well in an airtight container at room temperature for up to three days.
