These cinnamon sugar donut muffins taste just like old fashioned cake donuts but are baked, not fried. They are fluffy, buttery, and rolled in cinnamon sugar for a nostalgic treat.

  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground nutmeg
  • ½ cup (1 stick) unsalted butter, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk

For the Cinnamon Sugar Topping:

  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ cup (½ stick) unsalted butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and nutmeg.
  3. In a large bowl, cream together the softened butter and ½ cup granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 18-20 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
  8. While the muffins are baking, prepare the cinnamon sugar topping. In a small bowl, combine ½ cup granulated sugar and 1 teaspoon ground cinnamon. Melt ¼ cup butter in another small bowl.
  9. Once the muffins are baked, let them cool in the muffin tin for 5 minutes before transferring them to a wire rack.
  10. While the muffins are still warm, brush each muffin with melted butter, then roll it in the cinnamon sugar mixture until fully coated.
