  • 1 (15-ounce) can chickpeas, rinsed and patted very dry
  • 1 tablespoon olive oil
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon ground cinnamon
  • 1 tablespoon maple syrup or honey
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place the dried chickpeas on the prepared baking sheet. Roast for 15 minutes until slightly firm.
  3. While the chickpeas roast, whisk together the cocoa powder, cinnamon, maple syrup, and salt in a small bowl.
  4. Remove the chickpeas from the oven. Drizzle with olive oil and toss to coat.
  5. Return the chickpeas to the oven and roast for another 5-7 minutes.
  6. Remove from the oven. Immediately toss the warm chickpeas with the cocoa cinnamon mixture until evenly coated.
  7. Let them cool completely on the baking sheet. They will crisp up as they cool.

Notes

  • Make sure your chickpeas are very dry before roasting; this helps them get crispy.
  • You can adjust the cinnamon and cocoa powder amounts to your taste.
