These Coconut Almond Snowball Cookies are buttery, tender treats rolled in powdered sugar, then coated with crunchy toasted almonds and sweet coconut flakes. They are perfect for holiday baking or any time you want a simple, delightful cookie.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar, plus more for rolling
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup finely chopped almonds, toasted
  • 1 cup sweetened shredded coconut, toasted
  • 1/4 cup powdered sugar (for final dusting)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter and 1/2 cup powdered sugar until light and fluffy.
  3. Beat in the vanilla and almond extracts.
  4. Gradually add the flour and salt. Mix until just combined; do not overmix the dough.
  5. Stir in the toasted chopped almonds.
  6. Drop rounded teaspoons of dough onto the prepared baking sheets.
  7. Bake for 10 to 12 minutes, or until the edges are barely set and very lightly golden. They should remain pale.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  9. Once cool, gently roll each cookie in the reserved 1/4 cup of powdered sugar.
  10. In a shallow dish, combine the toasted shredded coconut with any remaining powdered sugar from the rolling process.
  11. Roll the powdered sugar-coated cookies in the coconut mixture, pressing gently so the coconut adheres.
  12. Place the finished cookies on a clean sheet of parchment paper to set before serving or storing.

Notes

  • Toasting the almonds and coconut enhances their flavor significantly. Do this slowly in a dry skillet over medium-low heat until fragrant.
  • For the best texture, ensure your butter is properly softened but not melted.
  • If you prefer a very white snowball look, skip rolling the cookies in the coconut mixture with the powdered sugar, and only use plain powdered sugar for the final coat.
  • Store these cookies in an airtight container at room temperature.
