1 cup frozen watermelon chunks
1/2 cup coconut water
1/2 cup plain Greek yogurt (or coconut yogurt for dairy-free)
1 tablespoon lime juice
1 teaspoon fresh ginger, grated (optional)
5-6 ice cubes (if needed for thickness)
Instructions
Place the frozen watermelon, coconut water, Greek yogurt, and lime juice into your blender.
Add the grated ginger, if you are using it.
Secure the lid and blend on high until the mixture is completely smooth and creamy.
If the smoothie is too thick, add a splash more coconut water. If it is too thin, add the ice cubes and blend again.
Pour immediately into a tall glass and enjoy this refreshing recovery drink.
Notes
For an extra boost of potassium, add half a small frozen banana.
If you prefer a sweeter drink, add a teaspoon of honey or maple syrup before blending.
Taste the watermelon first; very sweet watermelon may mean you skip any added sweeteners.
