Make fluffy, custard-like egg bites at home that taste just like the popular café version, featuring smoky bacon and sharp Gruyère cheese.

  • 6 large eggs
  • 1/2 cup cottage cheese (full fat recommended)
  • 1/4 cup whole milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup shredded Gruyère cheese
  • 1/4 cup shredded white cheddar cheese (optional, for texture)

Instructions

  1. Preheat your oven to 325°F (160°C). Prepare a standard 7-cup silicone muffin mold or egg bite mold. Lightly grease the mold cups.
  2. In a blender, combine the eggs, cottage cheese, milk, salt, pepper, and garlic powder. Blend on medium speed for about 30 seconds until completely smooth. This step is key for a smooth texture.
  3. Divide the crumbled bacon evenly among the prepared mold cups.
  4. Sprinkle the Gruyère and cheddar cheese over the bacon in each cup.
  5. Carefully pour the blended egg mixture over the cheese and bacon, filling each cup about three-quarters full.
  6. Place the silicone mold inside a larger baking pan. Pour hot water into the baking pan until the water reaches halfway up the sides of the silicone mold cups. This creates a water bath (bain-marie).
  7. Bake for 25 to 30 minutes. The bites are done when the centers are set and no longer jiggly.
  8. Remove the mold from the water bath and let the bites cool in the mold for 10 minutes before carefully removing them.

Notes

  • For an Instant Pot method, cook on high pressure for 8 minutes with a natural pressure release for 5 minutes, then quick release.
  • Do not overfill the molds; the mixture will puff slightly during cooking.
  • Using a blender ensures the cottage cheese fully incorporates, preventing a grainy texture.
