  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup dill pickle juice
  • 1 large egg
  • 1/2 cup milk
  • 1 1/2 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Peanut oil, for frying

Instructions

  1. Place chicken pieces in a bowl. Pour pickle juice over chicken. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  2. In a shallow bowl, whisk egg and milk.
  3. In another shallow bowl, combine flour, powdered sugar, salt, pepper, paprika, garlic powder, and onion powder.
  4. Remove chicken from pickle juice, discarding juice. Pat chicken dry with paper towels.
  5. Dip each chicken piece into the egg mixture, then dredge in the flour mixture, pressing to coat thoroughly.
  6. Heat peanut oil in a large pot or Dutch oven to 350°F (175°C).
  7. Carefully add chicken pieces to the hot oil in batches, being careful not to overcrowd the pot.
  8. Fry for 3-5 minutes, or until golden brown and cooked through.
  9. Remove nuggets with a slotted spoon and place on a wire rack set over a paper-towel-lined plate to drain excess oil.
  10. Serve hot with your favorite dipping sauce.

Notes

  • For best results, use dill pickle juice from a jar of pickles.
  • Do not overcrowd the pot when frying; this can lower the oil temperature and result in soggy nuggets.
  • Adjust seasoning to your preference.
