  • 4 cups frozen pineapple chunks
  • 2 tablespoons granulated sugar (adjust to taste)
  • 1 teaspoon fresh lime juice (optional, for brightness)

Instructions

  1. Open the chilled can of full-fat coconut milk. Scoop out the thick cream that has solidified at the top and place it into a high-speed blender. Reserve the liquid coconut milk for other uses or discard.
  2. Add the frozen pineapple chunks, sugar, and lime juice (if using) to the blender with the coconut cream.
  3. Blend on high speed, scraping down the sides as needed, until the mixture is completely smooth and creamy, resembling soft-serve ice cream. This may take a few minutes.
  4. If the mixture is too thick to blend, add a tablespoon of the reserved liquid coconut milk at a time until it reaches a blendable consistency. Avoid adding too much liquid, as it will make the Dole Whip less firm.
  5. Serve immediately for a soft-serve consistency. For a firmer texture, transfer the mixture to a freezer-safe container and freeze for 30-60 minutes before serving.

Notes

  • Chill your can of full-fat coconut milk in the refrigerator overnight. This helps the cream separate from the liquid, giving you a richer, creamier Dole Whip.
