1 pound mild Italian sausage
1 large yellow onion, chopped
4 cloves garlic, minced
6 cups chicken broth
4 medium Russet potatoes, peeled and thinly sliced
1 teaspoon salt
½ teaspoon black pepper
½ cup heavy cream
4 cups chopped fresh kale
Cooked bacon bits, for garnish (optional)
Parmesan cheese, for garnish (optional)
Instructions
Brown Italian sausage in a large pot or Dutch oven over medium-high heat, breaking it apart as it cooks. Drain excess grease.
Add chopped onion to the pot and cook until softened, about 5 minutes.
Stir in minced garlic and cook for 1 minute more, until fragrant.
Pour in chicken broth and bring to a simmer.
Add sliced potatoes, salt, and pepper. Cook until potatoes are tender, about 15-20 minutes.
Stir in heavy cream and kale. Cook for 2-3 minutes, until kale is wilted.
Serve hot, garnished with cooked bacon bits and Parmesan cheese, if desired.
Notes
For a spicier soup, use hot Italian sausage.
You can prepare the sausage and onion mixture ahead of time.
