Ingredients

  • 1 lb Italian sausage, bulk
  • 1 cup yellow onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 3 medium potatoes, peeled and diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/4 cup chopped fresh parsley
  • 1 cup chopped kale, tough stems removed

Instructions

  1. In a large pot or Dutch oven, cook the Italian sausage over medium-high heat until browned. Drain off excess fat.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
  3. Pour in the chicken broth, diced potatoes, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  4. Stir in the heavy cream and milk. Heat through, but do not boil.
  5. Add the chopped kale and cook for 5 minutes, or until wilted.
  6. Stir in the chopped fresh parsley.
  7. Serve hot.

  • You can substitute spinach for kale if preferred.
