  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, nutmeg, cloves, and salt.
  3. In a separate bowl, whisk together pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
  5. In a small bowl, beat softened cream cheese, powdered sugar, and 1 teaspoon vanilla extract until smooth.
  6. Fill each muffin cup about two-thirds full with pumpkin batter.
  7. Spoon about 1 tablespoon of cream cheese filling into the center of each muffin.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the pumpkin muffin (not the cream cheese) comes out clean.
  9. Let muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.
