  • 2 cups fresh corn kernels (from about 3 ears of corn)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, lightly beaten
  • 1/4 cup milk
  • 2 tablespoons melted butter
  • 1/4 cup chopped green onions
  • Vegetable oil, for frying
  • 1/4 cup honey
  • 1 teaspoon hot sauce (adjust to taste)

Instructions

  1. In a large bowl, combine the corn kernels, flour, cornmeal, baking powder, salt, and black pepper.
  2. In a separate small bowl, whisk together the egg, milk, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped green onions.
  4. Heat about 1 inch of vegetable oil in a large skillet or cast-iron pan over medium-high heat.
  5. Once the oil is hot (a drop of batter should sizzle immediately), spoon 2-3 tablespoons of batter per fritter into the pan. Do not overcrowd the pan.
  6. Cook for 3-4 minutes per side, or until golden brown and cooked through.
  7. Remove the fritters from the pan and place them on a plate lined with paper towels to drain excess oil.
  8. In a small bowl, whisk together the honey and hot sauce to make the hot honey.
  9. Serve the corn fritters warm, drizzled with hot honey.

  • Do not overmix the batter; a few lumps are fine.
  • Adjust the amount of hot sauce in the honey to your preferred spice level.
