Ingredients
Scale
2 cups cooked, shredded chicken
1 cup low-fat cottage cheese
1/4 cup celery, finely diced
2 tablespoons red onion, finely minced
1 tablespoon fresh dill, chopped
1 tablespoon Dijon mustard
1 teaspoon lemon juice
Salt to taste
Black pepper to taste
Instructions
Place the cooked chicken and cottage cheese into a medium bowl.
Use a fork or a hand mixer to break down the cottage cheese slightly and combine it with the chicken until the mixture is creamy. Do not over-mix; some texture is desired.
Add the diced celery, minced red onion, fresh dill, Dijon mustard, and lemon juice to the bowl.
Stir all ingredients together until they are evenly distributed.
Season the salad with salt and black pepper to your preference.
Chill the salad for at least 15 minutes before serving to allow the flavors to meld.
Notes
For a smoother texture, blend the cottage cheese separately before mixing it with the chicken.
Use rotisserie chicken for the quickest preparation time.
Serve this salad on lettuce cups, whole-grain bread, or with crackers.
This salad keeps well in the refrigerator for up to four days when stored in an airtight container.
