Make delicious, protein-packed cottage cheese egg bites at home. These crustless quiche cups are perfect for meal prep and taste just like your favorite Starbucks breakfast.

  • 1 cup cottage cheese, full fat or low fat
  • 6 large eggs
  • 1/4 cup milk or unsweetened almond milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese (Monterey Jack or cheddar recommended)
  • 1/2 cup cooked mix-ins (e.g., diced ham, spinach, cooked bacon bits)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or silicone egg bite mold.
  2. In a blender, combine the cottage cheese, eggs, milk, salt, and pepper. Blend until the mixture is completely smooth. This step is key for a creamy texture similar to Starbucks egg bites.
  3. Stir in the shredded cheese and your chosen cooked mix-ins by hand. Do not overmix.
  4. Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Bake for 20 to 25 minutes, or until the egg cups are set and a toothpick inserted near the center comes out clean.
  6. Let the egg cups cool in the tin for 5 minutes before carefully removing them.
  7. For best results and meal prep storage, allow them to cool completely before refrigerating.

Notes

  • For a smoother texture, you can use an immersion blender directly in a large measuring cup instead of transferring to a standard blender.
  • If you want to mimic the sous-vide texture, place the muffin tin inside a larger baking dish and add hot water to the dish until it reaches halfway up the sides of the muffin tin (a water bath).
  • These protein egg cups freeze well. Place cooled cups in an airtight container separated by parchment paper. Reheat from frozen in the microwave for 60-90 seconds.
