- 1 cup cottage cheese
- 6 large eggs
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheese (e.g., Monterey Jack or cheddar)
- 1/2 cup cooked, chopped mix-ins (e.g., spinach, ham, bell peppers)
- Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin well.
- In a blender, combine the cottage cheese, eggs, salt, and pepper. Blend until completely smooth, about 30 seconds.
- Divide the shredded cheese and chopped mix-ins evenly among the muffin cups.
- Pour the egg mixture over the fillings in each cup, filling them about three-quarters full.
- Bake for 20 to 25 minutes, or until the centers are set and a toothpick inserted comes out clean.
- Let the cups cool in the tin for 5 minutes before removing them.
