Ingredients
Scale
1/4 cup cottage cheese (full fat or low fat)
1 large egg
1 tablespoon unsweetened cocoa powder
1 tablespoon sweetener (like erythritol or monk fruit)
1 teaspoon melted coconut oil or butter
1/4 teaspoon vanilla extract
1/8 teaspoon baking powder
1 tablespoon chocolate chips (optional)
Instructions
Combine the cottage cheese and egg in a microwave-safe mug or small bowl. Blend with a fork or small immersion blender until completely smooth. You want no lumps remaining.
Stir in the cocoa powder, sweetener, melted coconut oil or butter, vanilla extract, and baking powder until just combined. Do not overmix.
Fold in the chocolate chips, if using.
Wipe down the sides of the mug if necessary.
Microwave on high power for 60 to 90 seconds. Cooking time varies by microwave wattage; start checking at 60 seconds. The brownie is done when the top looks set but the center is still slightly soft.
Let the brownie cool in the mug for 2 minutes before eating. This helps the texture set for a fudgy result.
Notes
For the best texture, make sure your cottage cheese is very smooth before adding dry ingredients. A few lumps will result in a less uniform brownie.
If you prefer a cake-like texture, add 1 teaspoon of almond flour to the mix.
To enhance the chocolate flavor, add a tiny pinch of instant coffee granules to the dry ingredients.
This is a great high protein mug brownie for a post-workout snack.
