Make a quick, single-serving, fudgy brownie using cottage cheese for added protein. This recipe cooks in the microwave in about one minute.

  • 1/4 cup cottage cheese (blended smooth)
  • 1 large egg
  • 1 tablespoon cocoa powder
  • 1 tablespoon sweetener (like erythritol or sugar)
  • 1 teaspoon coconut oil or melted butter
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon chocolate chips (optional)

Instructions

  1. Place the cottage cheese in a microwave-safe mug or small ramekin. Blend it briefly with a fork or immersion blender until completely smooth.
  2. Add the egg, sweetener, cocoa powder, coconut oil, and vanilla extract to the mug. Mix thoroughly until the batter is uniform.
  3. Stir in the chocolate chips, if using.
  4. Microwave on high power for 50 to 70 seconds. Cooking time depends on your microwave wattage; start checking at 50 seconds. The center should look mostly set but still slightly moist for a fudgy texture.
  5. Let the brownie cool in the mug for one minute before eating directly from the mug.

Notes

  • For the smoothest texture, blend the cottage cheese until it has the consistency of Greek yogurt before mixing other ingredients.
  • If you prefer a cake-like texture, add 1/2 teaspoon of baking powder to the dry ingredients.
  • If the brownie seems dry after cooking, next time reduce the microwave time by 5-10 seconds.
