1 (15-ounce) can black beans, rinsed and drained
1 (15-ounce) can black-eyed peas, rinsed and drained (optional, or use another can of black beans)
1 ½ cups frozen corn, thawed
1 red bell pepper, finely diced
1 green bell pepper, finely diced
½ red onion, finely diced
2 Roma tomatoes, seeded and diced
¼ cup chopped fresh cilantro
2 tablespoons olive oil
2 tablespoons lime juice
1 teaspoon ground cumin
½ teaspoon chili powder
¼ teaspoon salt
⅛ teaspoon black pepper
Instructions
In a large bowl, combine the rinsed and drained black beans, black-eyed peas (if using), thawed corn, diced red bell pepper, green bell pepper, red onion, and Roma tomatoes.
Add the chopped fresh cilantro to the bowl.
In a small bowl, whisk together the olive oil, lime juice, ground cumin, chili powder, salt, and black pepper.
Pour the dressing over the bean and vegetable mixture.
Gently toss all ingredients together until well combined.
Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
Serve chilled with tortilla chips or as a side dish.
Notes
For best flavor, make this a few hours ahead of time to let the flavors meld.
Adjust the amount of chili powder to your spice preference.
You can add a diced avocado just before serving for extra creaminess.
