This recipe combines the comforting flavors of French onion soup with grilled chicken. It features tender chicken breasts topped with sweet, caramelized onions and melted Gruyere cheese, creating a delicious and satisfying meal.

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 large yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1 teaspoon fresh thyme leaves
  • Salt and freshly ground black pepper to taste
  • 2 slices Gruyere cheese

Instructions

  1. Preheat your grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper.
  3. Heat olive oil in a skillet over medium heat. Add the sliced onion and cook, stirring occasionally, until softened and beginning to caramelize, about 15-20 minutes.
  4. Add the minced garlic and cook for 1 minute more until fragrant.
  5. Pour in the beef broth and add the thyme. Bring to a simmer and cook until the liquid has reduced by half, about 5 minutes. Season with salt and pepper.
  6. Grill the chicken breasts for 5-7 minutes per side, or until cooked through.
  7. Top each grilled chicken breast with a portion of the caramelized onion mixture.
  8. Place a slice of Gruyere cheese over the onions. Cover the skillet briefly or place under the broiler for 1-2 minutes until the cheese is melted and bubbly.

  • For extra flavor, you can deglaze the pan with a splash of white wine before adding the beef broth.
