  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (4 ounce) can chopped green chilies, undrained
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can great northern beans, rinsed and drained
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground white pepper
  • Salt to taste
  • 1/2 cup heavy cream or half-and-half
  • 1/2 cup shredded Monterey Jack or pepper jack cheese (optional, for topping)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until lightly browned on all sides. Remove chicken and set aside.
  3. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  4. Stir in green chilies, cannellini beans, great northern beans, chicken broth, cumin, oregano, and white pepper. Bring the mixture to a simmer.
  5. Return the chicken to the pot. Reduce heat to low, cover, and simmer for 20 to 25 minutes, or until the chicken is cooked through.
  6. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the chili base.
  7. Stir in the heavy cream or half-and-half until fully combined and the chili is creamy. Heat through gently, but do not boil.
  8. Taste and adjust salt as needed.
  9. Serve hot, topped with shredded cheese and fresh cilantro, if desired.

Notes

  • For an even creamier texture, mash about one cup of the beans against the side of the pot before adding the cream.
  • If you prefer more heat, substitute mild green chilies with hot green chilies or add a pinch of cayenne pepper.
