  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, whisk together 1 1/2 cups granulated sugar, vegetable oil, 2 large eggs, pumpkin puree, and 1 teaspoon vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. In another small bowl, beat softened cream cheese with 1/4 cup granulated sugar, egg yolk, and 1 teaspoon vanilla extract until smooth and creamy.
  6. Pour half of the pumpkin batter into the prepared loaf pan.
  7. Spoon the cream cheese mixture over the pumpkin batter in dollops.
  8. Pour the remaining pumpkin batter over the cream cheese layer.
  9. Using a knife or skewer, gently swirl the cream cheese mixture into the pumpkin batter.
  10. Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
  11. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
