1 (14 ounce) can artichoke hearts, drained and chopped
1 large ripe avocado, mashed
1/2 cup mayonnaise
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 tablespoon lemon juice
1/4 teaspoon salt
1/8 teaspoon black pepper
Optional: 2 tablespoons chopped fresh cilantro
Instructions
Preheat your oven to 375 degrees F (190 degrees C).
In a medium bowl, combine the chopped artichoke hearts, mashed avocado, mayonnaise, Parmesan cheese, minced garlic, lemon juice, salt, and pepper.
Mix all ingredients well until fully incorporated and creamy.
Stir in the optional fresh cilantro, if using.
Transfer the dip mixture to a small, oven-safe baking dish.
Bake for 15 to 20 minutes, or until the dip is heated through and lightly golden on top.
Serve warm with your favorite chips, crackers, or vegetable sticks.
Notes
You can make this dip ahead of time and store it in the refrigerator for up to two days before baking.
For an extra layer of flavor, add a pinch of red pepper flakes before baking.
If your avocado is not very ripe, the dip may not be as smooth.
