Make this rich and comforting Creamy Beef Tortellini Soup for a satisfying meal. This one-pot soup combines savory beef with tender tortellini in a velvety broth, perfect for a chilly evening.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (9 ounce) package refrigerated beef tortellini
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off any excess grease.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the beef broth and add the diced tomatoes (undrained), Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
  5. Add the refrigerated tortellini to the simmering soup. Cook according to package directions, usually about 5-7 minutes, until the tortellini are tender.
  6. Reduce the heat to low. Stir in the heavy cream until the soup is fully incorporated and creamy. Do not boil after adding the cream.
  7. Remove the pot from the heat. Stir in the grated Parmesan cheese until melted and smooth.
  8. Ladle the soup into bowls. Garnish with fresh parsley, if desired, before serving.

Notes

  • You can substitute fresh or frozen tortellini if refrigerated is unavailable. Adjust cooking time as needed.
  • For a thicker texture, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold water before stirring it into the simmering broth (before adding cream).
  • Feel free to add other vegetables like chopped carrots or celery with the onion for extra flavor and nutrition.
