  • 1 pound smoked sausage (like andouille or kielbasa), sliced
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 teaspoon Cajun seasoning (or more to taste)
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package directions. Reserve about 1/2 cup of the starchy pasta water before draining.
  2. While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove sausage and set aside.
  3. Add the chopped onion and bell pepper to the same skillet. Cook until softened, about 4 minutes.
  4. Stir in the minced garlic, Cajun seasoning, smoked paprika, and cayenne pepper. Cook for 1 minute until fragrant.
  5. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Let it reduce slightly for 2 minutes.
  6. Reduce the heat to medium-low. Stir in the heavy cream and Parmesan cheese. Continue stirring until the sauce is smooth.
  7. Return the cooked sausage to the skillet. Add the drained pasta.
  8. Toss everything together until the pasta is well coated. If the sauce is too thick, add a splash of the reserved pasta water until you reach your desired creaminess.
  9. Season with salt and pepper as needed.
  10. Serve immediately, garnished with fresh parsley.
