  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Toss the shrimp with Cajun seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink. Remove shrimp and set aside.
  3. Add onion to the skillet and cook until soft, about 3 minutes.
  4. Stir in garlic and cook for 1 minute until fragrant.
  5. Add orzo to the skillet and toast for 1 minute, stirring constantly.
  6. Pour in chicken broth. Bring to a simmer, then reduce heat to medium-low. Cook, stirring occasionally, for about 10-12 minutes, until the orzo is tender and most liquid is absorbed.
  7. Stir in heavy cream and Parmesan cheese until the sauce is creamy.
  8. Return the cooked shrimp to the skillet. Stir gently to combine and heat through.
  9. Season with salt and pepper as needed.
  10. Garnish with fresh parsley before serving.

  • Taste your Cajun seasoning first; adjust added salt based on its salt content.
  • If the sauce becomes too thick, you can add a splash more broth or cream.
  • You can substitute chicken broth with vegetable broth for a vegetarian option (omit shrimp).
