1 pound fettuccine pasta
2 tablespoons olive oil
1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
1 teaspoon salt
0.5 teaspoon black pepper
1 teaspoon garlic powder
1 cup heavy cream
1 cup whole milk
4 tablespoons unsalted butter
2 cloves garlic, minced
0.5 cup grated Parmesan cheese, plus more for topping
1 cup shredded mozzarella cheese
0.25 cup chopped fresh parsley (for garnish)
Instructions
Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
Cook the fettuccine according to package directions until al dente. Drain the pasta and set it aside.
While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt, pepper, and garlic powder.
Add the seasoned chicken to the skillet. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the minced garlic and cook for about 1 minute until fragrant.
Whisk in the heavy cream and milk. Bring the mixture to a gentle simmer, stirring constantly. Do not let it boil rapidly.
Remove the skillet from the heat. Gradually whisk in the 0.5 cup of Parmesan cheese until the sauce is smooth.
Add the cooked chicken and the drained fettuccine to the sauce. Toss everything together until the pasta and chicken are evenly coated.
Pour the mixture into the prepared baking dish. Sprinkle the mozzarella cheese evenly over the top.
Bake for 15-20 minutes, or until the cheese is melted and the edges are bubbly.
Let the bake rest for 5 minutes before serving. Garnish with extra Parmesan and fresh parsley.
Notes
You can use rotisserie chicken to save time during preparation.
For a richer sauce, you can substitute half the milk with half-and-half.
