4 boneless pork chops (about 1 inch thick)
1 tablespoon olive oil
1 tablespoon butter
Salt and black pepper to taste
1/2 cup chicken broth
1/4 cup dry white wine (optional)
2 tablespoons Dijon mustard
1 teaspoon whole grain mustard
1/2 cup heavy cream
1 tablespoon fresh parsley, chopped
Instructions
Season both sides of the pork chops generously with salt and pepper.
Heat olive oil and butter in a large skillet over medium-high heat.
Sear the pork chops for 3-4 minutes per side until golden brown and cooked through (internal temperature of 145°F). Remove chops from the skillet and set aside.
Reduce the heat to medium. Pour the chicken broth into the skillet, scraping up any browned bits from the bottom.
If using wine, add it now and let it simmer until reduced by half.
Whisk in the Dijon mustard and whole grain mustard until smooth.
Pour in the heavy cream and let the sauce simmer gently until it thickens slightly, about 3 minutes. Do not boil rapidly.
Return the pork chops to the skillet. Spoon the sauce over them.
Garnish with fresh parsley before serving immediately.
Notes
Make sure your pork chops are about 1 inch thick for even cooking.
You can substitute vegetable broth for chicken broth if preferred.
For extra tang, add a tiny splash of lemon juice to the finished sauce.
