A recipe for rich, creamy mashed cauliflower with a strong garlic flavor, designed to mimic the texture of traditional mashed potatoes.

  • 2 lbs cauliflower florets
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter (or dairy-free alternative)
  • 1/4 cup heavy cream (or unsweetened almond milk for dairy-free)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Steam the cauliflower florets until they are very tender, about 15 to 20 minutes.
  2. While the cauliflower steams, heat the olive oil in a small skillet over medium heat. Add the minced garlic and sauté for 1 to 2 minutes until fragrant. Do not let the garlic brown. Set aside.
  3. Drain the cooked cauliflower thoroughly. Place the cauliflower on a clean kitchen towel or several layers of paper towels and press firmly to remove as much excess moisture as possible. This step is key for creaminess.
  4. Transfer the dried cauliflower to a food processor or a large bowl.
  5. Add the butter, heavy cream, Parmesan cheese (if using), salt, and pepper to the cauliflower.
  6. Process or mash until completely smooth and creamy. Scrape down the sides as needed.
  7. Stir in the sautéed garlic mixture.
  8. Taste and adjust salt and pepper if necessary. Serve immediately.

Notes

  • For the best texture, ensure you press out all the water after steaming the cauliflower.
  • If you prefer a roasted garlic flavor, roast the whole cloves wrapped in foil with olive oil until soft before adding them to the mash.
  • Use a high-powered food processor for the smoothest, most potato-like texture.
