Make a rich, creamy orzo dish that tastes like risotto but cooks much faster. This recipe delivers big garlic parmesan flavor with minimal effort, perfect as a satisfying side or a light main course.

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil and butter in a medium saucepan over medium heat.
  2. Add the minced garlic and cook until fragrant, about 30 seconds. Do not let it brown.
  3. Stir in the orzo pasta and toast for 1 minute, stirring constantly.
  4. Pour in the broth. Bring the mixture to a simmer, then reduce the heat to medium-low.
  5. Cook, stirring occasionally, until the liquid is mostly absorbed and the orzo is tender, about 10 to 12 minutes.
  6. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy.
  7. Season with salt and pepper to taste.
  8. Serve immediately, garnished with fresh parsley.

Notes

  • You can substitute half-and-half for heavy cream for a slightly lighter result.
  • Stir frequently during cooking to prevent the orzo from sticking to the bottom of the pan.
  • Taste the broth before adding extra salt, as Parmesan cheese is already salty.
