You will create a deeply savory and comforting Creamy Garlic Sausage Pasta. This recipe delivers rich flavor quickly, making it perfect for a satisfying weeknight dinner.

Ingredients

Scale
  • 1 pound pasta (fettuccine or penne recommended)
  • 1 pound Italian sausage (casings removed)
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions. Reserve about 1 cup of the starchy pasta water before draining.
  2. While pasta cooks, melt butter in a large skillet over medium heat. Add sausage and cook, breaking it up with a spoon, until browned. Drain off excess grease.
  3. Add minced garlic to the skillet with the sausage. Cook for 1 minute until fragrant.
  4. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  5. Stir in the heavy cream and Italian seasoning. Let the sauce gently simmer for 3-5 minutes until it starts to thicken slightly.
  6. Reduce heat to low. Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
  7. Add the drained pasta directly to the skillet with the sauce. Toss well to coat everything.
  8. If the sauce seems too thick, add a splash of the reserved pasta water until you reach your desired consistency.
  9. Season with salt and pepper to your liking. Serve immediately.

Notes

  • Feel free to add fresh spinach or sun-dried tomatoes for extra color and flavor.
  • Elias suggests using good quality Parmesan; it melts better and tastes richer.
  • If you prefer a spicier dish, use hot Italian sausage instead of sweet.
