  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • 1 (16 ounce) package potato gnocchi
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chicken pieces and cook until browned on all sides. Remove chicken and set aside.
  3. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  4. Stir in garlic and cook for 1 minute until fragrant.
  5. Pour in chicken broth. Add thyme, rosemary, and bay leaf. Bring the mixture to a simmer.
  6. Return the browned chicken to the pot. Reduce heat to low, cover, and simmer for 15 minutes, or until chicken is cooked through.
  7. Remove and discard the bay leaf.
  8. Stir in the gnocchi. Cook according to package directions, usually about 3-5 minutes, until they float.
  9. Reduce heat to the lowest setting. Stir in the heavy cream and Parmesan cheese until the soup is creamy. Do not boil after adding cream.
  10. Season with salt and pepper to your liking.
  11. Stir in fresh parsley before serving.

Notes

  • You can use shredded rotisserie chicken instead of cooking raw chicken breasts for a quicker meal.
  • For an extra layer of flavor, sauté the vegetables until they begin to caramelize slightly before adding the broth.
  • If you prefer a thicker soup, you can dissolve 1 tablespoon of cornstarch in 2 tablespoons of cold water and stir it in before adding the cream.
