Create a rich, comforting skillet dinner featuring perfectly seared chicken thighs bathed in a velvety mushroom sauce. This recipe delivers deep, earthy flavor for a restaurant-style meal made easily at home.

  • 4 Boneless, skinless chicken thighs
  • 1 tablespoon Olive oil
  • 1 tablespoon Butter
  • 8 ounces Cremini mushrooms, sliced
  • 2 cloves Garlic, minced
  • 1/2 cup Chicken broth
  • 1/2 cup Heavy cream
  • 1 teaspoon Dried thyme
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken thighs generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Sear the chicken thighs for 5-7 minutes per side until golden brown and cooked through. Remove chicken and set aside.
  4. Reduce heat to medium. Add butter to the skillet.
  5. Add sliced mushrooms to the skillet and cook until they release their liquid and start to brown, about 5-7 minutes.
  6. Stir in the minced garlic and dried thyme. Cook for 1 minute until fragrant.
  7. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  8. Stir in the heavy cream. Bring the sauce to a gentle simmer and cook until it thickens slightly.
  9. Return the chicken thighs to the skillet. Spoon the sauce over the chicken.
  10. Cook for 2 more minutes to heat the chicken through.
  11. Garnish with fresh parsley before serving.

Notes

  • You can use chicken breasts, but cooking time will adjust slightly.
  • For extra richness, add a splash of dry white wine after the mushrooms soften, before the broth.
  • Taste the sauce before returning the chicken to adjust salt and pepper as needed.
