  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 8 ounces cream cheese, softened
  • 10 ounces frozen chopped spinach, thawed and squeezed very dry
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1 clove garlic, minced

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a baking dish.
  2. Place each chicken breast between two sheets of plastic wrap. Pound them to about 1/4 inch thickness using a meat mallet. Season both sides with salt and pepper.
  3. In a medium bowl, combine the softened cream cheese, dry spinach, Parmesan cheese, mozzarella cheese, and minced garlic. Mix until completely combined.
  4. Spoon about one-fourth of the spinach mixture onto the wide end of each flattened chicken breast.
  5. Roll the chicken tightly from the wide end toward the thin end, enclosing the filling. Secure the roll-up with toothpicks if necessary.
  6. Heat the olive oil in a large oven-safe skillet over medium-high heat. Brown the chicken roll-ups on all sides, about 2-3 minutes per side.
  7. Transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165 degrees F (74 degrees C).
  8. Let the chicken rest for 5 minutes before slicing and serving. Remove toothpicks before serving.

Notes

  • Make sure your thawed spinach is extremely dry; excess water will make the filling runny.
  • You can substitute heavy cream for some of the cream cheese if you prefer a slightly looser filling consistency.
  • If you do not have an oven-safe skillet, sear the chicken in a regular skillet and then transfer the roll-ups to a prepared baking dish before baking.
