  • 1 pound pasta (fettuccine or penne recommended)
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes packed in oil, drained and chopped
  • 1/2 cup dry white wine (optional)
  • 1 1/2 cups heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • Fresh basil or parsley, chopped, for garnish

Instructions

  1. Cook pasta according to package directions until al dente. Reserve about 1 cup of the pasta water before draining.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1 minute until fragrant.
  4. If using wine, pour it in and let it simmer, scraping up any browned bits, until reduced by half.
  5. Pour in the heavy cream and broth. Bring the mixture to a gentle simmer.
  6. Stir in the Italian seasoning and red pepper flakes. Season with salt and pepper.
  7. Reduce the heat to low. Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
  8. Add the drained pasta directly to the skillet with the sauce. Toss to coat completely.
  9. If the sauce seems too thick, add reserved pasta water, one tablespoon at a time, until you reach your desired consistency.
  10. Serve immediately, garnished with fresh herbs and extra Parmesan cheese.
