  • 1 pound potato gnocchi
  • 1 tablespoon olive oil
  • 1 pound ground chicken or turkey
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 packet (1 ounce) taco seasoning mix
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded Mexican cheese blend
  • 1/2 cup salsa
  • 1/4 cup chopped fresh cilantro, for garnish
  • Sour cream or Greek yogurt, for topping (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground meat and cook until browned. Drain excess fat.
  2. Add chopped onion to the skillet and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
  3. Sprinkle taco seasoning over the meat mixture and stir well to coat everything.
  4. Pour in chicken broth and bring to a simmer. Cook until the liquid reduces slightly, about 3 minutes.
  5. Stir in heavy cream and shredded cheese. Continue cooking, stirring often, until the cheese melts and the sauce thickens.
  6. Add the gnocchi directly to the creamy taco sauce. Simmer gently for 3-5 minutes, or until the gnocchi is heated through and tender.
  7. Stir in the salsa. Taste and adjust seasoning if needed.
  8. Serve immediately. Top each portion with fresh cilantro and a dollop of sour cream or Greek yogurt if you like.
