1 pound potato gnocchi
1 tablespoon olive oil
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
1 cup heavy cream
1/2 cup grated Parmesan cheese, plus more for serving
1/4 cup fresh basil leaves, chopped
1 teaspoon salt
1/4 teaspoon black pepper
Instructions
Cook gnocchi according to package directions. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add garlic and cook for 1 minute until fragrant.
Pour in diced tomatoes (with their juice) and bring to a simmer. Cook for 5 minutes, stirring occasionally.
Reduce heat to low. Stir in heavy cream and let it warm through for 2 minutes. Do not boil.
Stir in Parmesan cheese until the sauce is smooth and creamy.
Add the cooked gnocchi to the sauce. Toss gently to coat everything well.
Remove from heat. Stir in fresh basil, salt, and pepper.
Serve immediately with extra Parmesan on top.
Notes
You can substitute half-and-half for heavy cream for a slightly lighter sauce.
Use good quality canned tomatoes for the best flavor base.
Fresh basil makes a big difference; use dried basil only if fresh is unavailable.
