  • 1 pound cheese tortellini (refrigerated or frozen)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can tomato sauce
  • 1 cup vegetable or chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh basil, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and cook until softened, about 3 to 4 minutes.
  3. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the diced tomatoes, tomato sauce, broth, Italian seasoning, salt, and pepper. Stir well.
  5. Bring the mixture to a simmer.
  6. Add the tortellini to the skillet, stirring to coat them in the sauce.
  7. Cover the skillet and cook according to tortellini package directions, usually 8 to 10 minutes, stirring occasionally to prevent sticking.
  8. Reduce the heat to low. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy.
