Ingredients

  • Chicken breasts (4)
  • Olive oil (2 tablespoons)
  • Garlic (4 cloves, minced)
  • Sun-dried tomatoes (1/2 cup, packed in oil, drained and sliced)
  • Chicken broth (1/2 cup)
  • Heavy cream (1 cup)
  • Parmesan cheese (1/2 cup, grated)
  • Spinach (2 cups, fresh)
  • Salt (to taste)
  • Black pepper (to taste)
  • Dried Italian seasoning (1 teaspoon)

Instructions

  1. Season both sides of the chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear the chicken for 5-7 minutes per side until golden brown and cooked through. Remove chicken and set aside.
  4. Reduce heat to medium. Add minced garlic and sun-dried tomatoes to the skillet. Sauté for 1 minute until fragrant.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  6. Stir in the heavy cream and Italian seasoning. Bring the sauce to a gentle simmer.
  7. Stir in the grated Parmesan cheese until the sauce thickens slightly.
  8. Add the fresh spinach and cook until wilted, about 2 minutes.
  9. Return the cooked chicken breasts to the skillet. Spoon the sauce over the chicken.
  10. Serve immediately.

  • You can use fresh basil in place of or in addition to dried Italian seasoning for extra freshness.
