Create a restaurant-style creamy garlic salmon dish in your own kitchen. This one-pan meal features tender salmon fillets simmered in a rich, creamy sauce with fresh spinach and sun-dried tomatoes.

Ingredients

  • 2 Salmon fillets (about 6 oz each)
  • 1 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1 cup Heavy cream
  • 1/2 cup Chicken broth
  • 1/4 cup Sun-dried tomatoes, chopped
  • 2 cups Fresh spinach
  • 1/4 cup Grated Parmesan cheese
  • Salt and Pepper to taste

Instructions

  1. Pat the salmon fillets dry and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear salmon for 2-3 minutes per side, until golden brown. Remove salmon from skillet and set aside.
  3. Add minced garlic to the skillet and cook for 30 seconds until fragrant.
  4. Pour in heavy cream and chicken broth. Bring to a simmer, then stir in chopped sun-dried tomatoes and Parmesan cheese.
  5. Add spinach to the skillet and stir until wilted.
  6. Return the salmon fillets to the skillet, nestling them into the sauce.
  7. Simmer for 5-7 minutes, or until the salmon is cooked through and the sauce has thickened.
  8. Season with salt and pepper to taste.

Notes

  • For a touch of acidity, you can add a squeeze of lemon juice before serving.
  • Feel free to add other vegetables like cherry tomatoes or artichoke hearts.
