Learn the best technique for making extra crispy chicken wings in your oven without deep frying. These juicy inside, crispy outside wings are perfect for game day or any party appetizer.

  • 3 lbs chicken wing sections (flats and drumettes)
  • 1 tablespoon baking powder (aluminum-free is best)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup Buffalo wing sauce (or your favorite sauce like Honey Garlic or Lemon Pepper)
  • 2 tablespoons unsalted butter, melted (optional, for sauce)

Instructions

  1. Prepare the wings: Pat the chicken wings very dry using paper towels. This step is crucial for crispiness.
  2. Mix the dry coating: In a large bowl, combine the baking powder, kosher salt, black pepper, and garlic powder.
  3. Coat the wings: Add the dried chicken wings to the bowl. Toss well until every piece is evenly and thinly coated with the baking powder mixture. Do not skip this coating; the baking powder helps dry out the skin.
  4. Arrange on racks: Place a wire cooling rack over a rimmed baking sheet. Arrange the coated wings in a single layer on the rack, ensuring space between each wing for air circulation.
  5. Bake for crispiness: Preheat your oven to 425°F (220°C). Bake the wings for 25 minutes.
  6. Flip and continue baking: Flip each wing over. Reduce the oven temperature to 400°F (200°C) and bake for another 20 to 25 minutes, or until the skin is deeply golden brown and very crisp.
  7. Toss in sauce: While the wings finish baking, gently warm your Buffalo sauce (and melted butter, if using) in a small saucepan.
  8. Serve immediately: Transfer the hot, crispy wings to a clean bowl. Pour the sauce over the wings and toss gently to coat. Serve your crowd pleaser appetizers right away.

Notes

  • For the crispiest results, use aluminum-free baking powder.
  • If you prefer a dry rub finish instead of sauce, toss the hot wings with a mix of lemon pepper seasoning or ranch powder immediately after they come out of the oven.
  • If you want to use an air fryer, cook at 380°F (195°C) for 20 minutes, flipping halfway through.
