Follow these steps to make potato wedges that are crispy on the outside and fully flavored with garlic and Parmesan cheese using only your oven.

  • 4 large Russet potatoes, scrubbed and cut into 8 wedges each
  • 2 tablespoons olive oil
  • 1 teaspoon baking powder (this helps with crispiness)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line two large baking sheets with parchment paper. Do not overcrowd the sheets.
  2. Place the potato wedges in a large bowl. Toss them with the olive oil until lightly coated.
  3. In a small bowl, mix the baking powder, salt, pepper, and garlic powder. Sprinkle this mixture over the potatoes and toss well to coat every wedge evenly.
  4. Spread the seasoned wedges onto the prepared baking sheets in a single layer, ensuring there is space between each wedge for air circulation.
  5. Bake for 20 minutes.
  6. Remove the sheets from the oven. Toss the wedges gently on the sheet. Return them to the oven and bake for another 15 to 20 minutes, or until they are golden brown and crisp.
  7. While the wedges are finishing, mix the grated Parmesan cheese and minced garlic in a small bowl.
  8. Remove the hot wedges from the oven. Immediately sprinkle the Parmesan-garlic mixture over the hot potatoes and toss quickly to melt the cheese slightly and adhere the flavor. Serve right away.

Notes

  • Soaking the cut potatoes in cold water for 30 minutes before drying them completely can remove excess starch and improve crispiness. Pat them very dry with paper towels before oiling.
  • Use two baking sheets if necessary; overcrowding the pan will steam the potatoes instead of crisping them.
  • For extra flavor, you can add 1/2 teaspoon of dried Italian herbs to the seasoning mix.
