Corn tortillas: 12
All-purpose flour: 1 cup
Spices for dredging (chili powder, cumin, paprika, salt, pepper): 2 tablespoons total
Egg: 2, beaten
Oil for frying: Enough for 1 inch depth
For the Secret Sauce:
Mayonnaise: 1/2 cup
Sriracha or hot sauce: 2 tablespoons (adjust to taste)
Lime juice: 1 tablespoon
Garlic powder: 1/2 teaspoon

Instructions
Prepare the chicken by mixing the flour and dredging spices in one shallow bowl. Whisk the eggs in a second bowl.
Dip each chicken piece first into the egg, then coat thoroughly in the seasoned flour mixture. Press the flour on firmly for a good crust.
Heat the oil in a deep skillet to 350°F (175°C). Fry the chicken in batches until golden brown and fully cooked, about 4-6 minutes. Remove and drain on paper towels.
While the chicken cooks, prepare the secret sauce. Whisk together the mayonnaise, Sriracha, lime juice, and garlic powder in a small bowl.
Warm the corn tortillas. You can char them slightly over an open gas flame or warm them in a dry skillet until pliable.
Assemble the tacos: Place several pieces of crispy chicken onto each warm tortilla.
