1 pound white fish fillets (like cod or tilapia), cut into taco-sized strips
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon chili powder
1/4 teaspoon cumin
1/2 cup cold beer or club soda
Vegetable oil for frying
12 small corn or flour tortillas
For Topping: Shredded cabbage, lime wedges, cilantro, avocado slices
Instructions
Mix flour, salt, pepper, chili powder, and cumin in a shallow dish.
Pour in the cold beer or club soda and whisk until just combined. Do not overmix; a few lumps are fine. This creates your crispy batter.
Heat about one inch of vegetable oil in a large skillet over medium-high heat to 350°F (175°C).
Dip each fish strip into the batter, letting excess drip off.
Carefully place the battered fish into the hot oil. Work in batches to avoid overcrowding the pan.
Fry for 3 to 4 minutes per side until golden brown and crispy.
Remove the fish with a slotted spoon and place on a wire rack or paper towel-lined plate to drain excess oil.
Warm the tortillas in a dry skillet or under a damp paper towel in the microwave until soft and pliable.
Assemble your tacos: Place a piece of crispy fish in each warm tortilla.
Top generously with shredded cabbage, fresh cilantro, avocado slices, and a squeeze of fresh lime juice. Serve immediately.
Notes
For extra flavor, add a pinch of smoked paprika to your dry batter mix.
Use a high smoke point oil like canola or peanut oil for frying.
If you prefer baking, you can spray the battered fish with cooking spray and bake at 425°F (220°C) for about 15 minutes, flipping halfway.
