  • 2 large Eggs
  • 1/4 cup Milk
  • 1 tablespoon Hot sauce (optional)
  • 2 cups Vegetable oil (for frying)
  • 1/2 cup Mayonnaise
  • 4 cloves Garlic, minced finely
  • 1 tablespoon Lemon juice
  • 4 Brioche buns
  • Butter, softened
  • Lettuce leaves
  • Tomato slices

Instructions

  1. Pound the chicken breasts evenly to about 1/2 inch thickness.
  2. In one shallow dish, whisk together the flour, cornstarch, salt, pepper, paprika, and garlic powder for the dry dredge.
  3. In a second shallow dish, whisk the eggs, milk, and hot sauce (if using) for the wet mixture.
  4. Dredge each chicken piece first in the dry mixture, shaking off excess.
  5. Dip the floured chicken completely into the wet mixture.
  6. Return the chicken to the dry mixture, pressing firmly to create a thick, craggy crust. Set aside on a wire rack.
  7. In a small bowl, mix the mayonnaise, minced garlic, and lemon juice to create the garlic aioli.
  8. Heat the vegetable oil in a deep skillet to 350°F (175°C).
  9. Carefully place the breaded chicken into the hot oil, ensuring not to overcrowd the pan.
  10. Fry for 4 to 6 minutes per side, until golden brown and the internal temperature reaches 165°F (74°C).
