Make incredibly crispy garlic smashed potatoes with fluffy centers. This simple recipe brings big flavor to your table.

Ingredients

  • 3 lbs small potatoes (like Yukon Gold or red potatoes)
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Optional: Flaky sea salt for finishing

Instructions

  1. Place potatoes in a large pot and cover with cold, salted water.
  2. Bring the water to a boil and cook the potatoes until fork-tender, about 15-20 minutes. Drain them well.
  3. Preheat your oven to 425 degrees F (220 degrees C).
  4. Place the drained potatoes on a sturdy baking sheet.
  5. Gently smash each potato using the bottom of a glass or a potato masher until flattened, about 1/2 inch thick. Do not smash them completely flat.
  6. In a small bowl, mix the olive oil, minced garlic, salt, and pepper.
  7. Brush or drizzle the garlic oil mixture evenly over all the smashed potatoes.
  8. Roast for 25-35 minutes, or until the edges are deeply golden brown and very crispy.
  9. Remove from the oven. Sprinkle with fresh parsley and flaky sea salt, if using. Serve immediately.

  • Make sure the potatoes are completely dry after boiling before smashing them.
