  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cold water
  • Vegetable oil, for frying
  • 1/3 cup honey
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons rice vinegar
  • 1 tablespoon minced garlic
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon sesame oil
  • Pinch of red pepper flakes (optional)

Instructions

  1. Prepare the batter by whisking together the flour, cornstarch, salt, and pepper in a medium bowl. Slowly whisk in the cold water until you have a smooth, thin batter.
  2. Toss the cauliflower florets in the batter until fully coated.
  3. Heat about 1 inch of vegetable oil in a heavy-bottomed pot or deep skillet to 350°F (175°C).
  4. Carefully fry the battered cauliflower in batches, ensuring you do not overcrowd the pot. Fry for 4-5 minutes until golden brown and crispy. Remove with a slotted spoon and drain on a wire rack.
  5. While the cauliflower fries, prepare the sauce. Combine the honey, soy sauce, rice vinegar, garlic, ginger, sesame oil, and red pepper flakes (if using) in a small saucepan.
  6. Bring the sauce to a simmer over medium heat. Cook for 2-3 minutes, stirring often, until the sauce slightly thickens.
  7. Remove the sauce from the heat. Add the crispy cauliflower bites to the saucepan. Toss gently until every piece is well-coated in the sticky honey garlic sauce.
  8. Serve immediately for the best crispness.

Notes

  • For extra crispness, you can double-fry the cauliflower. Fry once until light golden, let them rest for 5 minutes, then fry again until deep golden brown.
  • If you prefer baking, toss the battered cauliflower with a little oil and bake at 425°F (220°C) for 20-25 minutes, flipping halfway. Toss with sauce afterward.
  • Garnish with toasted sesame seeds or chopped green onions before serving.
