1.5 lb Brussels sprouts, trimmed and halved
3 Tbsp olive oil
1/2 tsp kosher salt
1/4 tsp black pepper
1/2 cup grated Parmesan cheese, finely grated
2 cloves garlic, minced (optional)
Instructions
Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a large baking sheet with parchment paper for easier cleanup.
In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until evenly coated.
Spread the sprouts in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to ensure crisping.
Roast for 15 minutes.
Remove the pan from the oven. Sprinkle the grated Parmesan cheese and minced garlic (if using) evenly over the sprouts. Gently toss them on the pan to coat.
Return the pan to the oven and roast for another 8 to 12 minutes, or until the sprouts are tender inside and the cheese forms a golden, crispy crust.
Serve immediately.
Notes
For extra crispiness, place the baking sheet in the oven while it preheats.
If using an air fryer, cook at 380 degrees Fahrenheit (195 degrees Celsius) for 12-15 minutes, shaking the basket halfway through, then add the cheese and cook for 2 more minutes.
Use finely grated, dry Parmesan for the best crust formation.
