Make incredibly crispy Parmesan chicken cutlets right in your kitchen. This recipe delivers a satisfying crunch and juicy interior without the need for deep frying. It is a dependable weeknight dinner that tastes like restaurant quality.

Ingredients

  • Chicken breasts (boneless, skinless, about 1.5 lbs total)
  • All-purpose flour (1/2 cup)
  • Eggs (2 large)
  • Panko breadcrumbs (1 cup)
  • Grated Parmesan cheese (1/2 cup)
  • Salt (1 teaspoon)
  • Black pepper (1/2 teaspoon)
  • Garlic powder (1/2 teaspoon)
  • Olive oil or vegetable oil (for pan-frying, about 1/4 cup)

Instructions

  1. Pound the chicken breasts to about 1/4 to 1/2 inch thickness. You can slice them in half horizontally first if they are very thick.
  2. Set up a standard breading station with three shallow dishes.
  3. In the first dish, mix the flour with a pinch of salt and pepper.
  4. In the second dish, lightly beat the eggs.
  5. In the third dish, combine the Panko breadcrumbs, grated Parmesan cheese, garlic powder, remaining salt, and pepper.
  6. Dredge each cutlet first in the flour mixture, shaking off the excess.
  7. Dip the floured cutlet into the egg mixture, letting any excess drip off.
  8. Press the cutlet firmly into the Panko-Parmesan mixture, coating both sides well.
  9. Heat the oil in a large skillet over medium-high heat until shimmering. You need enough oil to coat the bottom of the pan well.
  10. Carefully place the cutlets in the hot oil, working in batches if necessary to avoid overcrowding the pan.
  11. Cook for 3 to 4 minutes per side until golden brown and cooked through (internal temperature reaches 165°F).
  12. Remove the cooked cutlets and place them on a wire rack set over a baking sheet to drain excess oil and maintain crispness.
  13. Serve immediately. Enjoy your flavorful meal.

Notes

  • Pounding the chicken thinly promotes even cooking and maximum crispness.
  • Using Panko breadcrumbs is key to achieving that light, airy crunch.
  • Do not skip pressing the breading onto the chicken; this helps it adhere during cooking.
  • If you prefer, you can bake these cutlets at 400°F for about 15-20 minutes after spraying lightly with oil.
