  • 2 pounds boneless, skinless chicken breasts
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can Great Northern beans, rinsed and drained
  • 1 (4 ounce) can diced green chilies, undrained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 1 (4 ounce) can diced green chilies, undrained (for extra flavor)
  • 1 (1 ounce) packet dry ranch seasoning mix
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 cup chicken broth
  • 8 ounces cream cheese, cut into cubes
  • 1 cup frozen corn (optional)

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. Top the chicken with both cans of rinsed and drained beans, both cans of diced green chilies (undrained), the diced tomatoes with green chilies (undrained), ranch seasoning mix, cumin, oregano, salt, and pepper.
  3. Pour the chicken broth over the ingredients.
  4. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
  5. Remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the slow cooker.
  6. Add the cubed cream cheese and frozen corn (if using) to the chili. Stir until the cream cheese is completely melted and the chili is creamy.
  7. Taste and adjust seasonings if needed before serving hot.
